Well, the Rebel's actually a pretty darned good camera for the money, and the 17-85 isn't a bad lens at all. I don't know much about the 75-300. If you want sharpness and your lens isn't giving it to you, I've found that the Photoshop plugin "Intellisharpen II" (I can't remember where I bought it, but if you Google it, it'll probably pop up) can be invaluable. I also try to shoot in RAW mode a lot because it gives you more latitude when it comes time to process the image. They take up way more space than a JPEG, but it works. :)
